If we use the $299 uncontested forms will we still have to abide by the 60 day cooling off period? At that point, will we have to appear before a judge for the final filing?

Yes, the 60 day cooling off period is required by law (unless there is domestic violence, in which case you won't be able to use uncontested divorce forms). After the cooling off period one of the spouses will need to attend a final hearing (also known as the "prove-up hearing") to present the divorce decree to the judge for signature.
